What is Mastiha

Mastiha is the treasured gem of the Aegean, a sweet, clear crystal from the aromatic resin of the Mastic Tree. This tree is extraordinarily rare and only grows in the southern part of the Greek island of Chios, in the eastern Aegean. Mastic has been harvested for at least 2,500 years since Greek Antiquity and is still only exclusively grown on the island of Chios. Mastic sap drops hang from the tree, and sparkle in the sunlight, they are said to resemble crystalline tear-drops; for this reason, the mastic sap is known as the ‘tears of Chios’. Chios mastiha has been recognised as a Protected Designation of Origin (PDO) product by the EU.

Mastic that comes from Chios is considered to be the best.

Attention should be given in the use of mastic, since a high dosage of this aromatic spice can give sweets and foods a particular bitter taste.

Mastic is a resin obtained from the mastic tree. It is also known as tears of Chios, being traditionally produced on the island Chios and, like other natural resins, is produced in "tears" or droplets.

Mastic is excreted by the resin glands of certain trees and dries into pieces of brittle, translucent resin. When chewed, the resin softens and becomes a bright white and opaque gum. The flavour is bitter at first, but after some chewing, it releases a refreshing flavour similar to pine and cedar.
