Someone once said: “When guests enjoy eating my handmade food, that moment is the best part of my life.” Do you also feel the same? If not, you should definitely try to impress your fellows next time. Trust me, it’s worth it.
Today we’re giving you 3 quite easy and, most importantly, super delicious cheese appetizers you could make at home. Let’s get down to work, shall we?
- Salty muffins
Products:
2 eggs
1 cup yoghurt
½ cup oil
1tsp salt
10tbsp flour
Baking powder
For the filling:
Cheese
Capers
Olives
Pickles
Ham
Oregano
Whisk the eggs with the yoghurt, oil, flour, salt and the baking powder. Of course, add the cheese as well! Here you may use any kind of cheese you like. Knead until you form soft dough. Divide it into two parts. In the first one, add capers, olives and spices by choice. Then make the second dough with pickles, ham and oregano.
The rest of the job is easy-peasy. Tear small pieces of dough and place them inside muffin forms. Be sure that you’ve greased them in advance so you don’t end up with sticky dough.
On top of each, stick a piece of olive or whatever else you like. This way you will be able to know which muffin what filling has.
Preheat the oven at 190C° and then bake for 20 minutes.
This should be enough for 12 big muffins. Perfect for a big company at home!
2. Quick soda bread with cheese
Products:
15tbsp flour
2 eggs
250ml yoghurt
100ml water
½ tsp baking soda
5-6tbsp oil
Salt
150g graviera (or other) cheese
1tbsp cumin
30g butter
Take a deep bowl and mix the yoghurt with the baking soda until it starts rising. Add water and eggs and whisk. Then start adding the flour, little by little, together with the salt and the oil. Make sure to form liquid-like dough, which is a bit denser than the one for pancakes.
Pour this mixture into a small baking tin, spread the cheese on top, season with cumin and bake at 180C° for about 20 minutes.
When the soda bread is ready, take it out and spread some butter on top. Put it back in the turned-off oven. Leave like this for 5 minutes or so.
In the very end, you can break up this tasty soda bread in front of your guests and enjoy their happy faces.
3. Homemade cheese rolls
Who would refuse a tasty homemade cheese roll?! Check out what you’ll need:
500g flour
1tsp dry yeast
Salt
100ml lukewarm water
1tbsp sugar
1 cup of yoghurt
3 eggs
2 egg yolks
226g butter, at room temperature
For the filling:
Cheese, cheese, cheese!
So, start by mixing the flour with the yeast and the salt. If you are using an active dry yeast, though, you should first dissolve it in the lukewarm water with the sugar. To make things easier we suggest you use a kitchen robot.
After that, add the eggs, the egg yolks and the yoghurt. Beat (or whisk) until you get soft and smooth dough. Grease it with oil and transfer to a clean bowl. Cover with foil and let it double rise.
After this time, knead a few times before you divide the dough into 8 equal parts. Flour your kitchen board and flatten out the first “ball” into a circular disk (~38cm diameter). Use a kitchen brush to spread some melted butter. Continue with the same process with the rest of the dough balls by putting each of them on top of the previous one. Remember: do not butter the very last ‘disc’! Instead, take your roller and flatten out even more as the layers are going to be a bit thick.
Then cut the dough into 16 triangles as you begin from the center. In the very end (the outer part) of each triangle place a tiny bit of cheese for the filling. The rest is easy. Start rolling until you make a…bun!
Place all the rolls in a large baking dish, put egg yolk on top, sprinkle with some sesame or whatever else you prefer. Let them rise for about 15-20 minutes making sure to cover them with a towel.
Meanwhile, preheat the oven at 200C° and bake for 15-17 min. These homemade rolls are going to be the best appetizer your guests will try!
